It's Merry Monday !

After a beautiful weekend, I'm ready for this new week. I've many things I want to do so I'll be busy as always.

My camping days are numbered now. There maybe 5 or 6 weekends left depending on the weather. If it gets too cold and wet it just isn't much fun at all. So I'll be hoping for some nice fall weather. From here on out things start to go downhill fast in our neck of the woods.. The end of October they close everything up at the campground until next April.

I know many are still suffering from the heat, but we have had some cool 60 and low 70 degree weather here.

Whether here or there, my days are always full to overflowing. I am just so thankful to be enjoying each as it comes.

Yesterday as part of my Octoberfest celebration I made some German Potato Salad. I found a microwavable recipe on line and it turned out quite good. I think I could have gone a little lighter on the vinegar in it, but it was easy and good so I thought I'd share it with you all today.

4 cups sliced cooked potatoes
6 slices bacon
1/2 cup chopped onion
2 Tbsp. all-purpose flour
2 Tbsp. sugar (or a little less)
1 1/2 tsp. salt
1/2 c. vinegar
1 tsp. celery seed

Bake potatoes in the microwave. Cool slightly, peel, and slice.

Cut bacon in small pieces. Cook in glass dish for 5 minutes on high. Stir halfway through cooking time. Stir in onion. Cook for 2 minutes on high.

Stir in flour, sugar, and salt. Mix thoroughly. Slowly stir in vinegar. Cook in microwave for 3 minutes. Stir every minute.

Blend in potatoes and celery seed. Toss lightly and serve.

Crazy weather.....we're still 10-15 degrees above normal here....but, the leaves are changing right on time!!!

Our Summer has been a washout not very many Sunny days and plenty of rain ~ Here's hoping you still have some good weather for camping ~ I hope this Monday is a Merry one for you ~ Ally x

that bowl of apples was beautiful! It is so hard to imagine the camping season will be winding down in just a few short weeks. I remember like it was yesterday when you were packing to go for the first weekend of the season. that German Potato salad sounds delicious!

Hi Ma...gorgive me for not coming around..but think I have things squared away within myself and will be checking in a bit more often..your words of wisdom were missed for sure...and our weather is nice...chilly in the evening but quite warm during the day...we have turned off the AC but a couple times..hubby has allergies so bad...cannot sleep with windows open...I am making preparation now to bring in my houseplants off the breezeway...takes a bit of planning as I have limited space LOL...glad you have gotten to camp and have a few more week ends..and I am going to try that recipe!!! love and hugs to you all day

Just caught up
we have had hot weather and dry
the aspens are not as pretty as some years because of it. We went up this last weekend and it was hot. Even when it is hot down here it is usually so much cooler up there...we were all hot while trying to hike around. Just hubby and i are going back next weekend for one more weekend in the camper. Elks are bugling ... love it.
